Soups' On!

Albondigas

A classic, Mexican, hearty soup filled with chunky vegetables and beefy meatballs.

Beef and Barley

A thick, flavorful broth covers barley and tender beef tips. Delicious and satisfying.

Tortellini and Sausage

Local Italian sausage paired with tortellini. Cannellini beans, veggies, and spinach or kale add delicious nutrients. 

Roasted Red Pepper and Tomato Soup

Roasted peppers and tomatoes in a lightly creamed soup. Garlic, onion, and a touch of basil ramp up the flavor. Suggested to serve this with a Bodacious Bacon Grilled Cheese Sandwich because you can't resist dipping it into the soup!


Entrees

Stuffed Italian Style Meatloaf

A traditional meatloaf with a twist; stuffed with fresh mozzarella, parmesan, sautéed mushrooms, spinach, sundried tomatoes, and a savory red sauce over all.

Tuscan Salmon over Orzo

Wild caught salmon, pan-seared then simmered in a creamy, Italian-inspired sauce. Serious comfort food. 

Oven Roasted Chipotle Chicken

Slightly spicy rubbed chicken legs, roasted until juicy and tender. Served with a brightly flavored, Cilantro Lime Rice.

Butter Chicken

Juicy chicken thighs sautéed then finished in a rich and creamy, curried sauce. Smells like heaven and tastes divine.


Breakfast

Breakfast Burritos

The humble tortilla gets filled with so many options: eggs, cheese, roasted home-fried potatoes, sausage, bacon, steak, peppers, onions, savory seasoned, sweet potatoes, black or pinto beans. 

Breakfast Egg Bites

Delicious little egg cups filled with your choice of meats, cheese, veggies. The perfect, on-the-go, protein packed breakfast.

Egg, Bacon, Cheese tucked in a croissant, english muffin, or bagel.

Roasted Chicken Salad

Start with a herb-rubbed and roasted chicken leg, good sea salt and fresh cracked black pepper. This guarantees a savory chicken salad you could serve between the bread, or on a bed of greens.


Please note:

This is a sample menu and is fully customizable to your needs. My preference is for organic, pastured, grass fed/finished foods whenever possible and based on your budget. I stay away from industrial seed oils, and use avocado oil, ghee, butter, olive oil, grass fed lard, and coconut aminos...lots of herbs, seasonings, fresh ground pepper, good quality salt, and a whole lotta love!
